Nana’s “Fried” Drumsticks

Disney Recipe DrumsticksIchabod Crane was caught several times eating entire drumsticks in one bite. The only chicken legs I can ever remember wanting to eat in one bite are my grandmothers. They were her interpretation of fried chicken, only baked in the oven. Whenever I smell them roasting, I always think of walking into her apartment for dinner. I lovingly pass this recipe on from Julia, or as I called her, Nana.

-4 chicken legs, skin on
-1 cup of corn flakes, crushed
-1/2 stick of butter
-2 teaspoons season salt
-1/2 tablespoon pepper

Crush corn flakes by hand or in a food processor until crumbled. Mix in season salt and pepper.

Melt the butter in a bowl. Drench the chicken with the butter, then dredge in the corn flake mixture. Bake at 325 degrees for 45 minutes (approximately-you don’t want the chicken to dry out, so maybe 40 minutes at first.)

Increase recipe as needed to serve the masses – you’ll eat 4 legs by yourself!
